Starting the blog
I suppose I'll have to come back and edit this later so I can add an intro. But, in the interest of hurrying, I'm just going to quickly jot down the dinner menu for last week. I need to start keeping a log of the week's eats.
Monday - "cream" of broccoli soup (surprisingly good and so much like the real thing!)
Tuesday - pan fried chicken thighs, baked acorn squash (baked potatoes for the littles)
Wednesday - meatloaf, leftover squash
Thursday - leftover soup (spaghetti for me and the boys)
Friday - bean soup
Saturday - pizza from the freezer (the boys and I ate at a Halloween party)
Sunday - ate out for my mom's birthday
The coming week:
Breakfast: Today, I scrambled a dozen eggs with ham and cheese and put them in the fridge for Ron's breakfast through the week. He also has a couple waffles left from last week.
Lunches: I already had mayo and bread dough made - it should last the week for sandwiches. (I make a fresh slice each day. The best bread recipe I have found is one that you microwave, not bake. Sounds bad - tastes good. It is soft and very much like store bread.) He'll have meatloaf, chicken and ham sandwiches. Fruit, nuts, parsnip chips, lara bars, turkey pepperoni sticks.
Baked goods: Saturday I made peanut butter cookies and pumpkin pie, so he's good to go on baked goods. Still a couple pumpkin cookies left, too.
Yogurt: RME. It is bad that I haven't had to make yogurt in a week. He hates the yogurt. Hates. Hates. Hates. He did eat a big bowl of it Saturday with pears that I stewed with cinnamon, honey and vanilla.
Menu is subject to change - cook has the right to be fickle!
Monday: Cheesy chicken with mushrooms and onions, turnips
Tuesday: Tacos or taco salad
Wednesday: Halloween! Burgers to grill at cookout. Dish to pass - Pumpkin tartlets, apple crisp?
Thursday: Ham and lentil soup (requested by 10 y.o.)
Friday: pizza
Saturday: leftovers
Sunday: ?
